Veg Grilled Cheese Sandwich

Street food in Mumbai is one of the major factors that kept me going in the hustle bustle of the “city of dreams” for over 3 years! And that reminds me of the oh-so-yummy veg grilled sandwich .. I visited the same eatery quite often because the sandwiches I had there were simply irreplaceable, no other place could beat the taste. Now I knew this guy grated the veggies rather than slicing them. So I tried cracking the recipe quite a few times but for some reason couldn’t match that taste. So I thought the easiest way to break the suspense would be to break the ice with this sandwich guy .. 🙂

So I started off with the usual opening statement “Kaise ho bhaiyya?” and he readily understood that I have a motive behind the move. 😉 So without beating around the bush for any longer, I came straight to the point and pleaded before him for the recipe. Tell you what? I was super surprised to know that the secret ingredients were no big secret really but just the sauces I serve on the side! I bought some bread, rushed home and headed straight to the kitchen. Followed his recipe to the T and yes .. yes yes yes! I nailed it! 😀

Not just my family but neighbors loved it too. BTW in India, we love sharing food with neighbors – one of the many things I love about India! Try this recipe and you’ll know what it feels like or rather .. what a super sandwich tastes like! 🙂

Time:

  • 40 minutes

Yield:

  • 8 triangular sandwiches

Ingredients:

  • 8 whole wheat bread slices
  • 1 tbsp unsalted butter
  • 1 onion – finely chopped
  • 2 green chillies – finely chopped
  • 1/2 capsicum – finely chopped
  • 1 carrot – grated
  • 1/2 cup cabbage – grated
  • 2 tsp red chilli sauce / sriracha sauce
  • 1 tbsp tomato ketchup
  • 1/2 cup grated cheese (cheddar / mozzarella / any cheese you like)
  • Salt to taste

Method:

  • Heat butter in a pan (don’t overheat as butter burns pretty quickly).

  • Add onion and green chillies and saute on medium flame for about a minute. We want to retain the crunchiness of the veggies, so avoid over cooking.

  • Next add capsicum, carrot and cabbage and saute for another minute.
  • Add red chilli sauce, tomato ketchup, salt and mix well.
  • Cook for another minute on medium flame.
  • Now add cheese, turn off the flame and mix well. The cheese will melt in no time.
  • While the mixture is cooling,  lightly butter 4 bread slices.
  • Spread the filling on 2 bread slices and place the remainder two slices on these with the buttered side facing down.
  • Grease the top of the bread with some butter and grill in a preheated sandwich griller for 5-7 minutes or until they turn crisp and golden brown from both sides.
  • Cut the sandwich diagonally and serve hot with your favorite dip or ketchup.
  • Repeat the same for the remainder of your bread slices.
